The most amazing dish for the holidays or any time of year: healthy fudge! Normal fudge is loaded with sugar and butter, but this version is made with a base of simple almond butter, cacao powder, maple syrup, and coconut oil – crazy! It’s unbelievably rich and chocolatey and tastes absolutely amazing. You’ll never guess that it’s plant-based, free of refined sugar, and gluten-free! The best part of this recipe is that it takes just 5 minutes to throw together and doesn’t require any baking. Just stir the ingredients together, put them in the fridge, and you’re ready to roll in minutes.
This dish is heavenly with raw pecans and cranberries for the holidays. They do a beautiful job of adding texture and extra flavor to the fudge and are absolutely dreamy together. Get creative and try different combinations of nuts, fruits, and superfood in place of the cranberries and pecans to use this recipe throughout the year. Macadamia nuts & blueberries, goji berries & cacao nibs, and sea salt & walnuts are some of my favorite combinations. Just be careful: this dish is highly addictive!

2/3 cup almond butter
¼ cup raw cacao powder
¼ cup coconut oil, melted
¼ cup maple syrup
1 teaspoon vanilla extract
A dash of salt
½ cup chopped raw pecans
½ cup dried cranberries
Extra chopped pecans
Sliced fresh cranberries
Couldn’t be easier – just combine the almond butter through salt in a large bowl, stir in the pecans and cranberries, spread the mixture onto a parchment paper-lined baking tin, and top with your favorite add-ons. I love chopped pecans and fresh cranberries on top. Cover and refrigerate for at least 20 minutes or however long you have, then enjoy! You can keep them in the fridge for up to 5 days. For longer storage, freeze them in an airtight container, then just put in the fridge overnight to defrost when you’re ready to eat.
