Raw Marbled Pumpkin "Cheesecake"
Greeting Fall🎃🍁 today by making it edible ❤️ Raw marbled pumpkin "Cheesecake" bars are here and they’re putting a big fat smile on my face. I have a feeling they’ll do the same for you. These are sweet enough for any Gilmore Girls marathon and wholesome enough to fuel a walk through the Fall leaves.
Crust: 3 bars of @squareorganics crisp bars, cut in half lengthwise and pressed into 6x9 baking form. I recommend freezing the base for at least 15 minutes before spreading the filling on top.
1 cup soaked raw cashews (I put them in boiling water and let them sit covered for about 15-45 minutes)
2/3 cup pumpkin puree
1/3 cup maple syrup
2 tablespoons pumpkin pie spice
1/4 cup cashew yogurt
1 tsp vanilla powder or vanilla extract
1 tbsp tocos (optional but delicious and great for skin)
Blend in food processor or large blender until smooth and spread onto crust.
Drizzle your favorite chocolate sauce and almond butter on top and SWIRL with a toothpick to get the marbling effect. Freeze for 2 hours before serving. Store in covered container in freezer.
